Let’s not forget Dandelyan in London, one of our favorite Green Hustlers! They employ simple techniques, from making interesting ingredients out of parts of the fruit not normally used, to employing preservation techniques like fermentation. Lyan opened their first bar, White Lyan, in London in 2013 as the first cocktail bar in the world to use no perishables; no fruit and even no ice. It was an exploration in sustainability, with much lower waste and a use of pre-made cocktails and innovative ingredients. Something as simple as putting lids on bins which, believe it or not, actually helps bartenders separate their waste because they don’t just sweep it all in in a one-er!
